This coffee has a light body with a sparkling clean finish. Clean Funky Terroir Experimental About The Producer José Ignacio Cubillos is a second generation coffee grower. At Finca La Praderita, he primarily grows Caturra, Catimor, and Pink Bourbon. In addition to singular lots, José also contributes cherries to communal lots comprising of producers from all over Northern Huila. Processing This Pink Bourbon lot is processed using a unique fermentation style called cochada. Upon arrival at the wet mill, the cherries are floated to remove defects and then left in a fermentation tank for multiple days, mixed with cherries from prior days of picking. Coffee picked in the first half of the week is de-pulped at the end of the week and added to the top of the previous day's batch. The coffee is then washed and dried for around 17 days. Variety Pink Bourbon is a variety primarily grown in Huila. Though newer than other varietals, it has quickly grown in popularity for its bright, sweet, and aromatic profiles. After recent years of research, it is now known to be a form of an Ethiopian Landrace. Transparency We Paid $16.06 USD/KG Roasted Costs $20.97 USD/KG This is our first time featuring a coffee from José Ignacio Cubillos and his farm, Finca La Praderita. This Pink Bourbon is delicate, floral and sweet.
