Clean Funky Terroir Experimental About The Producer Sebastian Ramirez, a native of Quindio, Colombia—a region renowned for its rich coffee culture—is a fourth-generation coffee grower. Six years ago, Sebastian transitioned from studying law to taking over his father’s farm, El Placer, located in the Buenos Aires de Calarcá village. The farm, spanning 14 hectares and situated at an altitude of 1,650-2,000 meters above sea level, is shaded by native trees, fostering ideal coffee-growing conditions. Today, Sebastian Ramirez is recognized as one of Colombia’s prominent specialty coffee producers, continually striving to produce exceptional coffee and uphold the legacy of El Placer farm. Processing The process starts at Sebastian Ramirez's farms, where the Pink Bourbon beans are handpicked and selected. The cherries are then sealed in a container filled with CO2 and undergo Carbonic Maceration for 100 hours while controlling pH and temperature. Next, the cherries are depulped and sealed again with a culturing of hops called Mosto, for another 100 hours. After these steps, the coffee is dried in Elbas (open patios) for up to 30 days and then stabilized for an additional 15 days. Variety Pink Bourbon is a variety primarily grown in Huila, Colombia and while newer, it has quickly grown in popularity for its bright, sweet and aromatic profiles. It is now known to be an Ethiopian Landrace but further information is not available at this time.
