Roasted April 3rd - LAST FEW BAGS Impressions: Floral, Grape, Citrus, Bergamot Process: Anaerobic Washed Producer: Pepe Jijon Variety: Geisha Altitude: 1515 MASL Region: Imbabura Country: Ecuador 200G This is an Extra-Light roast of Pepe's Geisha. It is limited in quantity, and should be enjoyed by experienced brewers or fans of extremely light coffees. This coffee is recomended to be rested for 3.5-5 weeks before opening. Opening before this can result in lower aromatics and perceived flavours while also expediting oxidation. This is an exciting coffee from our good friend and award winning producer Pepe Jijon. This coffee is extremely special and reminds us of our favourite Panama Geisha. On the nose it is extremely floral and in the cup we get juicy grapes, bergamot, citrus, and a juicy tropical finish. It has a delightfully silky mouthfeel and a beautifully balanced acidity. Pepe Jijon is an incredible producer with an inspiring farm: Finca Soledad. Soledad is a community-oriented project where Pepe and his family support and employ single mothers who have been abandoned by their husbands. Pepe only grows Typica Mejorado, Geisha and Sidra. The farm is very small with limited production so we are very lucky and thankful to have some of his coffee this year. After picking and sorting, this Geisha goes through a 30 hour in cherry fermentation followed by a 24 h mucilage fermentation. This coffee is then washed and dried for 45 days using a dark room to ensure the best results. Price Transparency: We Paid Pepe: $103CAD/KG Total Cost + Shipping & Import: $145CAD/KG
