In an effort to create a decaf that matches the caliber of our regular offerings, we pre-selected coffees with a bright and sweet profile before they are to be decaffeinated. This special lot represents the hard work of the multigenerational coffee-producing Montano family, whose farms in northern Huila produce some of the best Colombian coffees we’ve tasted all year. Their farms sit high within the Cordillera Central at 1800 MASL. After picking, the Montanos de-pulp their coffee and let it rest to ferment for an extended 60 hours before washing and drying on patios. At the Descafecol plant in Manizales, the caffeine is removed, as though by magic, using naturally occurring Ethyl Acetate derived from sugar cane. The result is intensely sweet and fruited both in aroma and flavor, with notes of cherry pie, muscat grape, and milk chocolate. This offering is roasted in a manner that makes it perfect for drip coffee preparations as well as a wonderfully rich espresso.
