The Typica in this case contributes an elegant acidity where the Bourbon brings higher sweetness and mouthfeel. Pepe and his processing manager, Manu, have absolutely mastered the honey processing method. It still produces a very clean cup but adds a layer of sugary sweetness and a coating mouthfeel.
