Region: Fraijanes, Guatemala (dept.) Elevation: 1630 masl About: Don Gregorio Zamora founded Finca Rabanles in 1884, but it wasn't until 1894 that he planted his first coffee trees. The farm has been in the family for five generations and is now managed by his great-great-grandchildren, Rafael and Maria Elena. It's only in the last few years that the family has begun to branch out into specialty coffee by producing unique high scoring lots, isolating their varieties (of which they grow many), and trying new processing methods. This lot is Typica, one of the oldest heirloom varieties. It's hard to grow and has low yields, but damn, it tastes good! It was processed using the white honey method, where the coffee cherries a pulped and spread out into very thin layers to dry with the sticky mucilage still attached.
