Volcan Azul sits around the fertile the slopes of the Poás Volcano in the West Valley of Costa Rica, an area famous for producing incredible coffee. Conservation is important to the Castro-Kahle family, and they have acquired 1500 hectares of rainforest for ecological preservation in the areas where they grow their coffee. The H17 variety is a hybrid between Catuai and Ethiopian Heirloom. This lot was processed using a traditional natural method where whole cherries are sun-dried on patios. This has created a coffee with red berry and tropical fruit notes.
