The Hacienda primarily grows sugar cane, but this continues to shift as demand for its coffee grows. Conservation is important to the Castro-Kahle family, and they have acquired 1500 hectares of rainforest for ecological preservation in the areas where they grow their coffee. This lot was processed using a traditional natural method where whole cherries are sun-dried on patios. This has created a coffee with red berry and tropical fruit notes.
