For more information on how we source coffees take a look at our Transparency Report. This is a special preparation limited edition micro-lot produced using a technique known as carbonic maceration: 1) Carefully harvested ripe cherry was floated and washed to removed defects. 2) The cherry was then fermented in sealed bags for 48 hours to kick start fermentation. 3) After fermentation the coffee was dried on raised table. This technique helps to enhance flavours by kick starting fermentation before the drying process takes place. This helps to create additional fruit flavours with more acidity.
