Founded in 2008, it has become a leader in innovative coffee processing, using proprietary technology, microbiology research, advanced biocatalysis, and its signature “thermal shock” method. From El Paraiso: “Carefully selected cherries first undergo an ozone disinfection process. After depulping, they undergo 24–36 hours of controlled anaerobic fermentation with Lactobacillus to enhance sweetness and smoothness. A double thermal wash is then applied, starting with immersion in hot water at 48°C and followed by a cold water shock at 4°C to preserve delicate aromatic compounds.
