This lot undergoes a distinctive double fermentation: first, cherries ferment ‘in cherry’ for 48 hours, then after pulping, they ferment for an additional 36 hours. This 84-hour process contributes to its unique flavour profile.Processed using the fully washed method and dried carefully on covered raised beds for around 18 days, the coffee preserves clarity and brightness.
