From the cool, limestone slopes of Sierra de las Minas in El Progreso, this coffee brings together the work of several small estate holders. After harvest, the parchment is prepared in Antigua by Josue Morales and the team at Los Volcanoes Coffee, who place farmer education at the centre of their work—covering biodynamic practices, natural pest and fungus control, and thoughtful farm management.
In the cup it’s classic, clean Guatemala with lovely clarity: ripe pear and red apple, a crisp malic acidity, and a gentle dried-fruit sweetness. The washed, patio-dried process keeps everything tidy and composed. What we love at Fjord is the way that pear-like sweetness meets red-apple brightness, finishing with that quietly persistent, dried-fruit depth.
We’ve roasted this lightly for espresso to emphasise sweetness and structure. It’s easy to dial in, delivering a silky texture and clear, apple-led acidity. Enjoy it straight for definition, or with milk where the fruit sweetness broadens without losing its poise.
Composed of Bourbon plus red and yellow Caturra grown around 1,800 masl, this lot showcases slow maturation at elevation, careful processing, and a focused roast designed to honour the work done at origin.
