On our cupping table at Fjord we’re tasting blueberry and peach iced tea up front, with a ripe prune depth. As it opens, dried apricot, panela and soft toffee come through, with a bright, tea-like acidity and a long, sweet finish. What we love is the way this coffee balances clarity and texture. Across different filter brewing methods it remains vibrant and articulate, with juicy fruit, delicate florals and a silky mouthfeel. As the cup cools, the sweetness deepens and the fruit becomes even more expressive. It’s a precise, fruit-forward filter coffee that remains generous and sweet from the first sip to the last. Bishan Wate sits near the Wate River and brings together cherry from around fifty smallholder farmers growing coffee at elevation in Guji’s red soils. For this premium day-lot, selection is meticulous, with the vast majority of cherry picked at perfect ripeness, floated for quality, and depulped the same day. The lot undergoes a longer 48-hour fermentation before drying slowly on raised beds with plenty of airflow and minimal direct sun for around 21 days.
