It’s immediately expressive yet wonderfully clean, with the kind of syrupy sweetness that makes Ethiopian espresso so satisfying. On our cupping table at Fjord we’re tasting blueberry and peach iced tea up front, with a ripe prune depth. As it opens, dried apricot, panela and soft toffee come through, with a bright, tea-like acidity and a long, sweet finish. What we love is the way this coffee threads clarity and texture. Pulled a touch shorter it’s jammy and perfumed; a little longer it turns silky and more overtly tea-like. With milk it leans into toffee apple and stone fruit while keeping its structure. It’s a precise, fruit-forward espresso that remains generous and sweet. Bishan Wate sits near the Wate River and brings together cherry from around fifty smallholders farming at elevation in Guji’s red soils. For this premium day-lot, selection is meticulous, with the vast majority of cherry picked at perfect ripeness, floated for quality, and depulped the same day. The lot undergoes a longer 48-hour fermentation before drying slowly on raised beds with plenty of airflow and minimal direct sun for around 21 days.
