The variety is Villa Sarchi (also known locally as Kenia), a Costa Rican selection closely related to SL-28. You feel that lineage here in the structure and clarity: bright, juicy acidity with well-defined fruit. We’re tasting star fruit and baked pear layered over toffee-like sweetness, finishing long and tidy. We’ve roasted this lightly for espresso to emphasise clarity and texture. Expect a syrupy shot with high sweetness and crisp definition; it also holds its shape in milk without losing that elegant fruit character. What we love about this coffee is the balance of variety character and processing: the generosity of a natural, delivered with the composure and transparency we chase at Fjord.
