Today, Zukuka Bora is changing this narrative. With dedicated site managers like Ken, farmers are supported with fair pricing and immediate payment for their cherries. Only the highest quality coffee is accepted, ensuring a sustainable and rewarding system for producers. One standout method is anaerobic fermentation—where whole cherries are sealed in airtight tanks for five days, intensifying flavors before careful drying on raised beds. The result is a vibrant, complex coffee, rich in character and reflective of Sipi’s unique terroir. Sipi coffee isn’t just a brew—it’s a revival of tradition, a commitment to quality, and a testament to the resilience of its people.
