> Shoo-wee! It’s a coffee with one of those letter-dash-number names from Diego Bermeudez and the ridic team at El Paríso. Cherries for M-03 are ripest cherries are meticulously hand-harvested, disinfected with ozone, and placed in sealed tanks for a 72hr anaerobic fermentation. They are then soaked with Lactobacillus cultures for a second fermentation followed by Diego’s signature thermal shock wash and slowly dried in Eco-Enigma. Expect intense cardamom aromatics, lush strawberry and naartje, and an unforgettable velvet finish of custard and coconut cream. - Producer: Diego Bermudez of El Paraíso - Region: El Tambo, Cauca - Variety: Castillo - Altitude: 1850masl - Cupping Score: 88.25 - Process: Ozone-sterilised cherry ferments for 72hrs underwater with a lactobacillus culture before pulping. Then anaerobically fermented again with cherry leachates before thermal shocked & dried in 30hrs in the Enigma dryer. - Cupping Notes: Silky & aromatic, bright yet so smooth. Swedish bun & honey, milk tart & lime. - Brew Notes: Cardamom & strawberry filters. Custard & naartjie shots. Coconut cream & mango capps.
