That density of flavour is no accident. This selection of the Geisha-esque 74158 varietal grown by smallholders in Gango Village is given the royal treatment. After hand-harvesting and cleaning a red carpet of cherry is laid out on raised beds re-sorting to guarantee uniform ripeness. The chosen cherries are then fermented in sealed barrels for 48 hours before being spread out in very thin layers for bed drying over 21 days.
