> WHY THIS COFFEE? It's a peaberry! We liked this one for its balance of sweet and jammy fig with lemon lime acidity. This coffee is also a fun mixture of different varietals that many folks have not tried. If you like light, sweet, syrupy bodies, this one is for you. We found this coffee to be best three weeks post roast. COFFEE DETAILS Origin: Cerrado Mineiro, Campos Altos, Brazil Producer and farm: Marcelo Assis, Bioma Cafe Varietal: Arara, IBC12, Paraiso (peaberry) Elevation: 1200 masl Processing: natural Green cost: $10.3/lb Percentage paid to producers: 75% BREW GUIDE Join us on Reddit to chat more. We taste: A jammy fig body and lemon lime acidity. We like it as: This one works with both conical and flat-bottom brewers. We like it on the more extracted side with higher temperatures and finer grinds. A 1:15 ratio works well here. Rest: This is a light / very light roast at an Agtron of 101. Rest at least three weeks. Four to six may get you more of the lemon lime as well.
