WHY THIS COFFEE? This coffee reminds us of Edwin Norena's raspberry coferment (EXP011)—but less extreme. We sampled it and loved it because it hits our flavor profile just right: sweet, fruity, and noticeably and unapologetically flavorful. Although it's not a coferment, the coffee highlights that Colombian producers can achieve a similar profile without added steps. We think that's something people are looking for in April 2026. COFFEE DETAILS Producer: Juliana Guevara and Wbeimar Lasso Location: La Argentina, Huila, Colombia, Finca La Terraza Varietal: pink bourbon Processing: natural, dried in raised beds Green cost: $11.34 Percentage paid to producers: 70% ROAST DETAILS Agtron: 90 Weight loss: 11.8% Development percentage: 11.6% BREW GUIDE How long to rest: This one is light at an Agtron of 90. Let it rest two weeks. We taste: Think lemonade with a splash of raspberry: or, pink lemonade. We get a lovely, full body and sweetness followed by a citric acidity and tartness that rounds out the cup. We like it as: A conical brewer to elevate those fruity, floral notes with a lower temperature (~202F) and less agitation—use a drip assist if you've got it—to buffer the extraction.
