This fully washed coffee comes from the Shakiso area of Ethiopia's Guji region, where 310 smallholder farmers have refined the art of producing clean, vibrant coffees. At the washing station, modern eco-pulpers and a multi-channel fermentation system allow for precise, consistent processing from cherry to parchment. After careful hand-sorting, the coffee cherries are depulped within six hours of harvest and fermented for 24 to 36 hours, with the duration adjusted to match the ambient temperature. The coffee is then thoroughly washed through three channels to remove the remaining mucilage before being transferred to raised drying beds, where it dries slowly over 10 to 14 days. The result is a coffee with exceptional clarity, allowing Guji's distinctive terroir to shine through. Expect expressive floral aromatics, ripe stone fruit sweetness, and lively citrus acidity in the cup. Beyond quality, the cooperative has made significant investments in water recycling and sustainable processing practices, helping reduce its environmental impact while maintaining rigorous quality standards.
