Juan de Dios Castillo and his wife Miriam Aruaz purchased the land beginning in the 1980s with profits from their tailor shop. The estate is still operated within the family, running their own drying and processing mills, giving them complete control over processing while maintaining quality and not compromising the land. About Nicaraguan Coffee: Nicaraguan green coffee is known for its smooth, well-rounded flavor profiles, often featuring notes of chocolate, nuts, citrus, and mild fruit. With high altitudes combined with a tropical climate and fertile volcanic soils, Nicaragua offers ideal conditions for cultivating high-quality Arabica varieties. Coffee farming in Nicaragua is largely driven by small to medium-sized farms, many of which practice shade-grown and organic methods. The country has made significant strides in sustainable agriculture, with many producers embracing environmentally friendly harvesting techniques.
