Na vrtoglavih 2150 metara nadmorske visine, u agrošumarskom sistemu, 1000 malih farmera uzgaja drevne sorte kafe (“Heirloom”) koje su deo njihovog života vekovima. Ono što ovu kafu čini posebnom je ekstremna posvećenost detaljima nakon berbe. Partner SNAP primenjuje fermentaciju od čak 60 sati, nakon čega sledi rigorozan režim sušenja na afričkim krevetima. Kafa se “sunča” samo u jutarnjim i popodnevnim satima, dok se u podne pokriva kako bi se zaštitila od najjačeg sunca. Taj spori ritam sušenja čuva delikatne cvetne arome koje definišu ovaj klasik.
