Cañaris is a community lot from the province of Ferreñafe, Lambayeque. Although Lambayeque is more widely recognized for its coastal beaches than for coffee production, the highland areas of Cañaris provide ideal elevation and climate conditions for fantastic coffee cultivation. This lot represents six small-scale growers, each with farms located around 2,000 masl. The cherries all go through a standard washed process, with a 12-hour fermentation in whole cherry, followed by depulping and an additional 48 hours of fermentation prior to washing. This allows for controlled development while preserving clarity and structure in the final cup.
