MEET THE PRODUCER | Lots from the Worka Chelbesa washing stations in Gedeb, Ethiopia, have long been some of our most anticipated lots of the year. In fact, we buy more coffee from this washing station than any other in Ethiopia - and for good reason! The team at Atlantic Specialty Coffee works closely with Negusse Debela, the owner of these washing stations, to ensure rigorous quality standards and also inspire new and innovative processing methods. If you're a fan of our washed Ethiopian offerings, Negusse Debela's name is probably pretty familiar to you by now- he's the computer-guru-turned-coffee-producer who has been making all kinds of waves throughout the specialty coffee community in Ethiopia. Established in 2008, Negusse's collective - SNAP Specialty Coffee - seeks to provide specialty Ethiopian coffees processed "consistently and exceptionally." They run or partner with several washing and processing stations throughout Ethiopia, including the two Worka Chelbesa washing stations in Gedeb, where this offering hails. TRUST THE PROCESS | This lot, composed of indigenous landrace varieties, is the first of the season from Worka Chelbesa and was processed using traditional Ethiopian washed protocols, with a shorter period of underwater fermentation before being rinsed and spread out to dry on African raised beds. No fancy co-fermentation happening here, folks - just the traditional washed processing method, executed beautifully. TAKE A SIP | Fans of other washed Ethiopian offerings - such as those from Danche and Riripa - will rejoice in this cup! Everything about this coffee is classic, from the soft florals on the nose to the finish that lingers like black tea.
