If you're a fan of our washed Ethiopian offerings, Negusse Debela's name is probably pretty familiar to you by now- he's the computer-guru-turned-coffee-producer who has been making all kinds of waves throughout the specialty coffee community in Ethiopia. Established in 2008, Negusse's collective - SNAP Specialty Coffee - seeks to provide specialty Ethiopian coffees processed "consistently and exceptionally." They run or partner with several washing and processing stations throughout Ethiopia, including the two Worka Chelbesa washing stations in Gedeb, where this offering hails. TRUST THE PROCESS | This lot, composed of indigenous landrace varieties, is the first of the season from Worka Chelbesa and was processed using traditional Ethiopian washed protocols, with a shorter period of underwater fermentation before being rinsed and spread out to dry on African raised beds. No fancy co-fermentation happening here, folks - just the traditional washed processing method, executed beautifully.
