MEET THE PRODUCER | Luis Anibal Calderon is a third generation coffee producer who began his journey at age nine by working on his father's farm. Today, he is a large and well-known producer throughout Huila, and he's earned quite a reputation for pushing the limits of coffee cultivation. Luis is an avid collector and curator of exotic coffee varieties, and he views his farm as something of an arboretum, nurturing and showcasing these unique cultivars. TRUST THE PROCESS | After being handpicked at peak ripeness, the coffee cherries are meticulously hand-sorted before spending a whopping six days in anaerobic fermentation tanks. Afterward, they are floated, hand-sorted one last time, and spread out on patios to dry. TAKE A SIP | Fruity and complex, this coffee lands on the funkier side of the spectrum and showcases everything we'd expect from a well-executed Colombian natural. Tropical, dried, and red fruits can all be perceived, but we experience grape and raspberry most vividly.
