Altitude: 1910–2000 masl Variety: Geisha Harvest: January 2026 Lot: Lot 2 Process: 96-hour Cold Fermented Washed Drying: Raised Beds + 2 Weeks Resting in GrainPro Bags in a Dark Room + Raised Beds Flavor: Jasmine, Citrus, Orange, Lemon Candy, Orange Juice About Beans: Gato Grande is operated by Jean Paul together with Yessie Hartmann, who comes from a renowned coffee-growing family. The farm takes its name from the large wild cats that are frequently seen in the area. The Geisha cherries for this lot were harvested from elevations between 1,910 and 2,000 meters. After picking, the cherries rested intact for 12 hours before undergoing a 96-hour cold fermentation at 20–22°C. The coffee was then depulped and fully washed. For the drying stage, Jean Paul follows his signature approach. Once the coffee reaches approximately 17% moisture content, it is packed into bags and rested in a dark room for two weeks, allowing moisture to redistribute evenly within the beans. The coffee is then returned to raised beds to complete the final drying phase. This lot beautifully demonstrates the combined advantages of high-altitude terroir and meticulous processing. The cup showcases intense jasmine florals, a distinctive citrus character, and vibrant acidity with sweetness reminiscent of lemon candy and fresh orange juice. View full details
