Las Lajas Estate, run by 3rd generation coffee producers Dona Francisca and Oscar Chacon, is located right in the foothills of the Poas volcano in the Central Valley of Costa Rica. Most coffee is processed using either a "dry" or "washed" method. This bean however, goes through a specialized process that is in between the two. A "honey process" keeps the coffee cherry around the seed until the fruit dries to a certain color (white, yellow, red or black), which imbues a little extra sweetness and can modify the body strength and acidity. The Black honey process is the longest out of the four colors, meaning it is the fruitiest and sweetest. Done to a full city light roast, the Las Lajas Black Honey offers a full body and high acidity. Expect notes of strawberry, green apple, and grape, plus that yummy natural sweetness thanks to the special processing method!
