Leviathan is our flagship espresso — the same coffee that won America's Best Espresso at CoffeeFest Portland in 2015, and the shot we pull at all three of our Seattle cafes every single day.The blend is 70% natural Ethiopia Guji and 30% washed Brazil. The Guji brings the fruit — a cherry cola sweetness and ripe plum character that's unmistakable. The Brazil adds structure: a smooth, low-acidity base with brown sugar depth and a dark chocolate finish that lingers. Together they produce a shot with rich crema, a syrupy body, and enough complexity to drink straight or cut through milk.We've tuned this blend over years of daily production. It's forgiving enough for home espresso machines and rewarding enough for seasoned baristas dialing in on commercial gear.
