CHOCOLATE – MALT – GRAPEFRUIT Often, decaf doesn’t get the love or the attention that it deserves, and we think that’s a great shame. Enter, Popayan Reserve; Making use of the Sugar Cane process to decaffeinate the beans, the result is a cup that happily rivals its caffeinated counterparts, and is even the preferred brew for some. High praise indeed amongst the current landscape of speciality coffee. Production is a collaboration between 65 growers throughout the Mesata de Popayan, and Cofinet. It is set up to provide growers financial and agronomical support to work towards higher quality coffee. This includes a visit from the program agronomist every 4 months to advise the farms on best practices, credit for purchasing equipment, and premiums paid if coffee reaches a certain quality level. The end result is long standing relationships fostering better working conditions, better support, and a better bean. The use of Sugar Cane processing helps to preserve the Popayans natural flavour, leading to a pleasant balance between caramel sweetness and a fruity acidity, making the Popayan a very versatile coffee. * * * *Although we make every attempt to have seasonal coffee available to order, occasionally some products are not available to ship immediately because we are in the process of hand-roasting them.* The roastery dispatches web orders via Royal Mail. All orders of a single 250g bag will be posted Second Class, and orders with multiple bags will be posted First Class.
