> Arsenio's Chiroso A natural Chiroso from El Mirador in Santa Isabel, Tolima, produced by Arsenio Sandoval. Grown at high altitude in the volcanic soils of the Colombian Andes, this coffee is selectively harvested, carefully fermented and dried naturally on raised beds. A family produced lot with depth, structure and the expressive herbal sweetness that makes Chiroso stand out. If you're brewing on espresso: Choose the filter roast for an espresso with a higher complexity, acidity and a more-fruit-forward outspoken cup. We recommend choosing the espresso roast for a more full bodied, less fruit-forward and more classic, yet still complex, cup. This depends on personal taste and who drinks it, we personally love a more fruit-forward cup with higher acidity and complexity so we always brew our espresso with the filter-roast. We brew this at the roastery with 19 grams in, 46 grams out in 25 seconds for our perfect cup.
