It is not an easy variety to cultivate, but in the right conditions it can deliver remarkable aromatic intensity and layered sweetness. At Los Cipreses, Sudan Rume is paired with meticulous anaerobic processing. Cherries are fermented in a controlled oxygen-limited environment, allowing naturally occurring microorganisms to shape the development of sugars and fruit character before drying.
