On his small 1.5-hectare farm, Clever works alongside family members, focusing on careful cultivation and precise post-harvest practices. After depulping, the cherries ferment for 24–36 hours before drying slowly for around 10–12 days. The result is a clean and expressive cup that reflects both the highland terroir and the promise of these young trees. We’ve roasted it ultra-light to let the nuances shine. Expect bright orange zest, sweet panela syrup, and delicate jasmine, rounded by notes of honey.
