Origin: Pitalito, Huila, Colombia Producer: Jhoan Vergara Farm: Finca Las Flores Process: Washed (Thermal Shock) Varietal: Pink Bourbon Altitude: 1,750 masl Tasting Notes: green apple, sweet, smooth, lemongrass, herbal This coffee is a snapshot of place, grown at Finca Las Flores, a family farm with more than three decades of history and a reputation for innovation in southern Huila. Now led by Jhoan and Diego Vergara, the farm is known for its precise fermentation practices and cultivation of exceptional varieties. This Pink Bourbon lot underwent a careful, multi-stage process: 36 hours of anaerobic fermentation in cherry, followed by 12 hours of oxidation, and a second 36-hour anaerobic stage post-pulping. It was then finished with a 30-minute thermal shock at 50°C to preserve and amplify aromatics, and gently dried over 36 hours. We’ve roasted it ultra-light to let the nuances shine. Expect lemongrass and sweet green apple, with a light, clean body and elegant, herbal finish.
