Through their project Zarza Coffee, the family blends heritage with innovation, focusing on traceability, experimental processing, and exceptional quality. This Pacamara lot undergoes a highly controlled advanced washed process. Carefully selected cherries with high sugar content (22–26° Brix) are first oxidized for 24 hours, followed by 60 hours of anaerobic fermentation in whole cherry. After depulping, the coffee continues fermenting for another 60 hours in sealed bags, finishing with a thermal shock at 50°C before mechanical drying. These techniques amplify sweetness, aromatics, and fruit expression while maintaining clarity. We’ve roasted it ultra-light to let the nuances shine. Expect raspberry and papaya fruit notes layered with honey sweetness, bright citric acidity, and a balanced body.
