Traditionally, Sumatran coffees undergo “wet hulled” processing so seeing a honey processed lot peaked our interest! With this technique, cherries are pulped and the beans, instead of moving to fermentation/washing tanks, are immediately sent to drying. You can expect hints of jasmine and cedar balancing out accents of bright grapefruit and raisin.
