Is a land well known for the mineral soils, that produces unique terroirs to the coffees, the elevation is 1600-1650 masl and the farm have some varieties like Pink bourbon, Geisha, Sidra, Caturron and Papayo. The quality of this coffee is enhanced by organic handling and protection of the soil with natives species that provides shadow and good nutrients asimilation to the coffee. Produced by Eyder Martinez, a dear friend who works as the Biochemical Engineer for El Pariaso, this lot was grown and cared for by his grandfather who grows Geisha, Pink Bourbon, and Sidra. Processing After picking and sorting, this coffee was held in cherry for a 24 hour fermentation, followed by a traditional washed process and dried in a solar dryer for an average of 8 days. Variety Pink Bourbon is a variety primarily grown in Huila, Colombia and while newer, it has quickly grown in popularity for its bright, sweet and aromatic profiles. It is now known to be an Ethiopian Landrace but further information is not available at this time. Transparency Direct $24.2USD/KG Roasted Costs $31.93USD/KG Eyder is a dear friend who has worked with us for a few years, but this lot is a first for us. Eyder works for El Paraiso as their biochemical engineer and coffee processor. Over the past couple years we have grown a good relationship with Eyder, working with him and El Paraiso in Cauca, but this beautiful Pink Bourbon is the start of a new relationship - focusing on his own coffee. This Pink Bourbon is a beautiful, bright and clean Pink Bourbon with a vibrant acidity and long, clean finish. This is a micro lot of 30KG total.
