Regular turning of the cherries prevents damage from over-fermentation or mold growth. Post-drying, the cherries, now at a moisture level of 11.5-12%, are stored in a local warehouse. Further processing, involving color, density, and screen size sorting, takes place before the final milling, preparing them for export.
