Today, Rafael Jr. continues to build on that foundation, embracing sustainable methods to safeguard the farm's vitality for generations to come. He has instituted a vermicompost programme that generates organic compost directly on the farm, significantly reducing reliance on chemical fertilisers. This lot comes from La Fany's Red Bourbon trees, naturally processed by drying whole cherries on raised beds. Slow and careful drying allows the fruit character to fully develop, producing a coffee that's loud and juicy, packed with raspberry and blackberry, finishing with a wave of milk chocolate.
