Only appearing near Inzá, Cauca, it appears to be a local cultivar that is uniquely well-adapted to the region's highest elevations. A sweet, resonant coffee, we're tasting flavors of watermelon candy, strawberry, and cherry, subtle florals, and buttery caramel. This will make an excellent filter coffee or a wonderful seasonal espresso. This estate had long grown bourbon, one of the major varieties of coffee grown throughout the world and commonly seen on traditional Colombian coffee farms (particularly older farms that have not been replanted with new, disease resistant cultivars like castillo).
