This coffee undergoes a meticulous natural process managed by Qima, which begins with fresh cherry harvesting and careful sorting to ensure quality. The cherries are then submerged in water for 48 to 72 hours, allowing a controlled fermentation that develops complex flavours. Following fermentation, the beans are dried on African beds until they reach the ideal humidity.
