Las Nubes farm is located in the Agua Negra village, just 15 minutes from the municipality of Pitalito, at an altitude of 1,700 m above sea level. Las Nubes, was acquired in 2020 by Claudia Samboni. The farm location and excellent micro climate are all perfect for the production of excellent coffees. Strategically uniting the air currents that come from the Laboyos valley to meet the coolness of the mountain of the natural reserve that surrounds the farm. They focus on producing various varietals and processing methods to create exciting micro lots. Harvesting and Processing: The coffee is very carefully hand harvested from pink bourbon varietal trees and then processed using the following method: Coffee is fermented in sealed metal drums for 60 hours Pulped to removed most of the fruit leaving some mucilage Fermented in sealed metal drums for 140 hours Coffee is washed to remove all mucilage Dried on raised beds for 20-25 days This process involves no added elements and the fermentation has been used to elevate the natural flavour characteristics of the pink bourbon varietal. Tasting Notes: This is a stunning coffee that showcases the amazing flavour profile of high altitude pink bourbon coffee. With a cup score of 87+ you can expect a wide range of tasting notes that include treacle, pomegranate, grape and a lovely brown sugar sweetness. Brewing: This coffee works well for all brew methods. Filter: Dose 15g, water 250g. Espresso: Dose 17 gram to 40 gram yield over about 30 seconds. This coffee is available as wholebean and pre ground but we recommend always grinding fresh before brewing. We sell a range of grinders if you would like to grind this coffee fresh at home.
