This has been a standout coffee on the cupping tables this season from Colombia's main harvest. The cup profile is noticeably lively with a juicy-fruit saturation, at times, it has a kenyan-like acidity and intensity. This Rosado has a round feel with a bright red fruit punch. There's also a prominent stone fruit sweetness with a red apple acidity. A pleasure all around from hot to cool, a wonderful option for immersion and filter brew styles. Carlos Mario has been growing his operation in Pitalito for the last fifteen years. He now has two farms and a growing variety of cultivars. His wife Patricia and uncle Hermes help keep the farms updated. There are also up to ten seasonal workers that help pick and process the coffee during the main harvest. This micro-lot was processed in their multi-step beneficio. The cherry's were hand selected at their ripest. Held in-cherry for 24hr.s. This coffee was then depulped and fermented for 60hr.s. Washed and then dried on raised beds until the moisture content reached a stable 10.2%. Pink Bourbon is a fairly new varietal to the world of coffee. It has vastly changed the specialty landscape of Colombian farming in the last few years. This variety has been identified as a Landrace with a prized profile that is now highly sought after. Many roasters like myself are paying much higher premiums for coffees like this with such high cup quality. I hope you enjoy this coffee as much as I do! Order by Sunday for next Monday's roast.
