With this iteration of Y-05, our reality is a muscat, chamomile, and champagne cup of Diego's genius-ness. Ripe cherry is sterilised in ozone before a 72hr submerged anaerobic fermentation. Then depulped & fermented another 36hrs with a culture made of the pulp and mucilage. A thermal shock wash follows, locking in flavour, before drying over 34hrs in Diego's Enigma dryer. This is a 250g box from our El Paraíso Collection Special Release range.
