Next is handwashed and dried on shaded beds for 9-12 days. During this process the coffee is turned every few hours to ensure even drying. #### Taste This coffee is delicates entrance to Ethiopia season and we are starting with all gas, no breaks. This coffee shows up in cup with soft citrus notes which lead into its clean and strong jasmine florals. The florals are nicely complemented by a perfumey white peach that goes long into the finish with the florals. This is an elegant washed coffee that I look forward to drinking every morning. Over days of tasting we have experienced notes of yuzu, white peach, jasmine, and white tea.
