They believe that any special processing technique is a means to elevate inherent qualities of the beans, rather than compensating for any deficiencies. Through temperature and humidity control in anaerobic vessels, followed by 2 weeks of sun-drying on shelves, this lot has notes of lychee, rose, and strawberry.
