MEET THE PRODUCERS | Our friends at Azahar Sources commissioned this gorgeous ensemble of five lots from five coffee producers in the idyllic municipality of Chachagüi, in Nariño: Ruby Alida Paguatian, José Ernesto Burbano, Juan Francisco Ortiz Sepúlveda, Yermy Pedraza, and Jorge Erazo. The resultant blend is a celebration of each producer's ingenuity and innovation - a goal which is shared and showcased in each of blends coming out of our own roastery. TRUST THE PROCESS | After being handpicked at peak ripeness, the coffee cherries in each of the five lots underwent a 24-hour period of dry fermentation before being rinsed and then dried. Each producer utilized his or her own proprietary drying method to individualize flavor profile and complement variety characteristics. TAKE A SIP | Fruity and sweet, this coffee reminds us of a few of our most nostalgic holiday treats: chocolate-covered cherries, and chocolate oranges. There's plenty of fruit on the palette to let you know these coffees were naturally processed (think red cherry, dried mango, and navel orange).
