This commitment also extends to the environment, as they've used their profits to create sustainable gas recycling to power their farm & reduce emissions, and have invested in water filtration to prevent river contamination. The "Natural Process" (also known as dry processing) refers to the method used to remove the coffee seeds from their cherries after picking. While a "wet process" would use water, this natural process uses raised drying beds. For this bean, they allowed the seeds to ferment inside the cherries for 18 hours first, then dried them on raised beds for 21 days. This results in a brighter, fruitier flavor profile.
