When Pepe visited us in Porto, cuppings turned into long conversations, eating pasteis de nata, and bit walks. What started as a business trip became a friendship, build on a shared belief that coffee can be a force for good, for people, for farms and dor the forests that surround them. Pepe developed the “Wave” process which is a reference for the different temperatures, going from higher to lower, that the coffees undergoes in fermentation tanks and refrigerators. The result is a clean floral and citric cup with incredible clarity and syrupy texture.
