## Was der Röster sagt

> - Variety: Sidamo - Country: Colombia - Region: San Adolfo. Huila - Process: Anaerobic Washed - Altitude: 1900 MASL - Producer: Wilder Lazo, Segundo Lazo, Heiner Lasso - Farm: El Rubí - Roast Level: Extra-light In the cup We get beautiful florals like lavender and jasmine and earl grey with a great sweetness that reminds us of melon dew and white honey. This coffee is vibrant, clean, memorable, and floral with a long sweet finish. Clean Funky Terroir Experimental About The Producer Wilder Lasso (or Lazo) is actually a veterinarian specialized in livestock farming. As the coffee price continued to decline in 2016 and his father fell seriously ill, he decided to bring the family farm up to speed together with his brother. Initially, their coffees scored between 80-83 points on the cupping scale, despite elaborate processes and preparations. Wilder started examining soil samples and using targeted nutrients and fertilizers to neutralize the pH value, thereby increasing the availability of nutrients for the coffee trees. He refers to this as precision agriculture. Processing After harvest the cherries are pulped immediately, which Wilder puts into blue fermentation tanks with the lid on and lets it ferment during 60 hours. After that it’s fully washed and dried in marquesinas during 14 days. Transparency Direct $44 USD/KG Roasted Costs $66.25 USD/KG Another stellar coffee from El Rubí and our friend, Wilder Lazo. This time we are excited to share his anaerobic washed Sidamo. In the cup we get intensely sweet blue candies, lavender florals and a sparkling citric acidity. This is an extra-light roast variant of El Rubí. We offer extra-lights for experienced brewers who pursue clarity over initial intensity and are willing to wait 4-6 weeks for best results. This Extra-light roast is delicate and aromatic and sacrifices intensity of acidity and perceived sweetness. We recommend this roast for ultra-light roast lovers only.
